This image was first converted to Lab mode from RGB in Photoshop. The a and b channels were then deleted leaving just the Luminance Channel. This was then converted back to greyscale (although this JPEG is RGB with an sRGB profile for web display consistency). Note the extra detail in the dry stone wall compared with simply desaturating the image or converting to greyscale.
